Chaource is a tall white mould cheese only made in a tightly controlled area in the Champagne and northern Burgundy regions of France, it was accepted in the AOC family in 1977. 


Chaource is a soft cheese made from whole cow’s milk, it has a soft-ripened, creamy and a little bit crumbly texture. Surrounded by a white Penicillium candidum rind, it takes 2-3 months to ripen completely. The cheese has a salty crème fraiche like flavour with mushroomy finish.
