Robiola is an Italian soft-ripened cheese of the Stracchino family, it is from the Langhe region of Northern Italy and made with varying proportions of cow, goat and sheep’s milk. Robiola di Bufala is made with 100% water buffalo milk, it has a luxurious, velvety mouthfeel and an incredibly rich flavour with a hint of savouriness on the back palate. There are subtle notes of green pastures and fresh herbs – a result of the buffalo grazing on natural pastures. The immaculate white interior underneath its bloomy rind has a smooth, full, tangy and mildly sour flavour, likely due to the high fat content. An ancient style of cheese modernised by the use of water buffalo milk usually destined to mozzarella di bufala in that region of Italy.
