A cow's milk blue, from Chaumes, France. St Agur is Rich and creamy and one of the cheese room's most popular cheeses!
St Agur is a relatively commercial cheese. It is slightly lower in salt, and creamier in texture than some of its more artisanal counterparts. This is due to the use of a special selection of 'designer' blue moulds. These are cultured on rye bread and crumbled into the curds just before hooping. The cheese is matured for three months which gives us a well-balanced, sweet and creamy cheese with a gentle blue flavour.
